  • Thanks for the quick response. Just made shrimp enchiladas last night again. Sauce is beautiful paired with it. I do want to try a mild sauce so kids can begin to try more stuff. Thanks again.

  • @blgrieb Hi :) just use the guajillos plus the spices. :) it will be barely mild..not hot. thats what I used to do for my kids. :)

  • This is my third time making this sauce, awesome. How could I make it more mild? Could I cut it with tomato sauce, or try different chile proportions? Also, can I substitute fresh roasted jalapenos and pasillas instead of boiled/dried? I don't need to make it mild, but I want to make one for my 3 and 5 year old.

  • everything was perfect up until when you put the salad on the plate, i like salad but not with enchiladas, i would of preferred some mexican rice and some mashed pinto beans. very good and informative video though

  • looks good....another good option besides the salad would be refried pinto beans and good ole mexican rice. mmmmmmmmmmm................mmm­mmmmmmmmmmmmmm

  • I tried the classic way (i.e. your way). Super yummy. The whole is more than the sum of its parts. You gotta have the cheese (I used cotija) and the onion (I used spanish onions) and I admit I added some avocado smashed with garlic salt and lime juice. All together the tastiest enchilada i think I've every had. Thank you!

    Next time will try with the chipotle and see how that goes.

  • Nice! I love enchiladas! It's my favorite home style Mexican dish! My mom makes them when she wants to make me smile hehe My mom makes them with California pepper but I think Guajillos are more authentic :)
