  • Great job PepperPilot!! Both the video and the BGE brisket cooking. I grew up in Texas eating brisket from all kinds of folks who really knew how to do it right, I have my version if you would like to watch it. Since I got the plate setter i quit using my v-rack. Plus I got a Victorinox 10-Inch Round Tip Slicing Knife that is awesome to carve with. I bring mine up to 200 even though 185 is plenty. Great job brother brisket eater...

  • Keep the daisy wheel top turned so that the pivot screw is pointing at you and it will hold it's setting when opened. :) Good looking Brisket !
