Great job PepperPilot!! Both the video and the BGE brisket cooking. I grew up in Texas eating brisket from all kinds of folks who really knew how to do it right, I have my version if you would like to watch it. Since I got the plate setter i quit using my v-rack. Plus I got a Victorinox 10-Inch Round Tip Slicing Knife that is awesome to carve with. I bring mine up to 200 even though 185 is plenty. Great job brother brisket eater...

Keep the daisy wheel top turned so that the pivot screw is pointing at you and it will hold it's setting when opened. :) Good looking Brisket !
