That dimensional webbing that covers his suit is also on his hands. When he touches walls with his palms, mostly the webbing would make contact with the wall, not his actually palms. Only the very tips of his fingers would be able to touch the wall directly through the fabric of his suit and allow him to grip to a wall.
Now plently of times he just uses his tips, but when he's got himself in a snag, which he often does, Spider-Man won't have the luxury of concentrating to make sure his finger tips touch whatever he needs to get a grip of.

I've never heard of him or seen him stick to walls while wearing Nikes, and if he is doing so, I highly doubt it was before the reboot in '99. They changed a great deal about Spider-Man.
