Great videos Craig, but I have a couple questions for you. How important is the air lock? and do you ever use finings or gelatine? If so how do I go about using it?
@paulewismith The airlock is not that important. You can brew beer with the fermenter covered in plastic wrap and a rubber band holding it on. The CO2 layer that forms on the beer will protect it from oxidation, and the constant creation of CO2 will keep the bugs out by creating a positive pressure. I don't use finings unless I'm adding hops and/or steeping grains. Even then I just use Irish moss or whirlflock. (sp) I've never used gelatin in beer, only hard cider.
interesting you mentioned sediment in the bottom of bottles, I've been noticing that Bud Light Golden Wheat often has sediment in the bottom ! Which I thought was surprising, but also goes to show it's no big deal.
That just means that it was carbonated naturally in the bottles. You're right, it's no big deal. However, for those who don't like it, I've got a solution coming up, and I think it's a breakthrough.

is that the coopers bitter? i just brewed an all grain ordinary english bitter and it turned out amazing. that got me wondering about the coopers can. if it is, how is it?
Im new to brewing and I just started my first batch last night. I was wondering however about if siphoning the beer into the carboy for the 2nd fermentation stage might be better if I dont want so much sediment. Is this ok and will it work?
You might end up with a little less sediment, but it's not going to be much different. The method you describe is called dual stage method and some people do it but when I tried it, it didn't make enough difference to bother.
With a kit like this a secondary is a waste of time.I ferment for 3 weeks then siphon to a bottling bucket and you should not have any.
Just let it settle for a bit after putting in bottling bucket.And i drink the sediment out of my bottles it wont hurt you or make you sick.Also when adding malt remove from the hot burner.
When I started brewing, like you, I just used the yeast under the cap. But when I changed to better quality dry yeasts, I noticed a vast improvement in flavour. Whereas Cooper's yeast is really fruity, the Nottingham yeast I use is clean tasting much like a beer you would buy. Give it a try sometime, it is only $2 or so a pack, and it is dry, just like the Cooper's. Thing to note, keep the temps down, below 20c is best. It will go as low as 14c no problem. Great for winter brewing :)
Is that "X-rated comment removed" bit of your own doing, or is that youtube censoring you? Aren't these videos intended for people of drinking age and thusly, people capable of handling "X-rated comments?"
I love these videos, so please don't take this as any sort of attack. I just get frustrated when I hear of how youtube is censoring peoples work, and in some cases completely deleting things and removing accounts.

Craig, do you bottle clear, or do you bottle cloudy and let it clear as it charges? and any comments on such?

I bottle cloudy and it takes about 5 days to clear in the bottles. Much faster than a secondary carboy.

i'm a first time brewer using coopers and i have a few questions...
when its time to bottle my 5 gallon can i bottle 1/2 of it and leave the other 2.5 gallon say for another 30days? is that possible?

No. Don't do that. As soon as you bottle half of it, you let a whole lot of oxygen in there and contaminants. The remaining half will be spoiled.

Hey Craig, Real Ale is the brew i most frequently do, I am sure you will enjoy it,
you will find it is a very strong flavoured beer, what I do is I actually add more water and sugar to the mix
30Litres water
and 1 1/4 kilos raw sugar
and it comes out more like a 'lager' so to speak, not as thick on taste that is and your malt goes further... perhaps you might like to try that
