@cheezavenger - Yes, he did! I didn't even know about it! I will see if I can rent the DVD and upload the featurette, though I will be damned if I'm sitting through "Shorts" because that movie looks terrible and got terrible reviews.
@cheezavenger - Now THAT is a meal...all-day Cup coverage. Start out the day with the Breakfast Tacos...and then Puerco Pibil for lunch and dinner. :)
Thank you for making home made flour tortillas. If you don't want to make home made just get your store bought and lay them on a pan and they will bubble up. Turn them over after a minute. They aren't as good as home made, but you might find it easier.
Normally, you're totally right, but this meal already has a lot of fats and using cream may simply make the whole dish too heavy. You've got the butter, the corn oil, and the lard to really bring on that substantial flavor. Milk (not skim, not cream, just regular milk) should be fine for the eggs.
I agree with adding milk to eggs it does make them fluffier and if you're cooking for a big mexican family then the little bit of milk can help stretch the servings.
I like to add chili powder to the eggs instead of just salt & pepper. Also, depending on where you live you may be able to find a grocery store or Mexican bakery that will sell you fresh tortillas. They won't keep for more than a day or so because they don't have preservatives, but they'll taste better than the grocery store kind. Here in Austin, the HEB on Oltorf has an in-store tortilleria and I think Fiesta stores sell fresh tortillas as well. For those of us too lazy to make our own. =)
When he says 10 minutes, hes referring to the lesson, not the time it takes to cook. In the other 10 minute cooking school he makes a pork dish that takes over 3 hours until it's ready.
believe me ... I am from Mexico and that is the correct way of doing a good breakfast .... well ... most mexicans ... specially from central and south Mexico would not add milk to the eggs ... but his family is from northern Mexico and that is the way they make them over there
listen you're adding to much milk then or not cooking long enough, i've never had runny scrambled eggs. the milk makes it a little more fluffy not dense. i implore you, do some research(you obviously have access to the net) find out for you're self! (I'm not getting on you're case i just disagree)
JEJEJE
i tried it today in the morning... it was good exept i had no pepper... but nice... i did the potatoes one ... i shall try the other kind tomorrow... or another day.
mmm.. that looked good, have to love the video..... also and dumb tip, try spreading butter in the tortillas once they are done, they taste great that way, and add "frijoles (beans)" to the tacos...........
I'm really kinda upset with Robert Rodriguez for that. I saw the movie twice in theaters, then they split the movie up with the intention on sucking more money from fans, then announced it would all be in one box set (possibly "remastered" which just defeats the purpose) and RR pushes back the Cooking School. :(
See, that's what I was saying...he had PROMISED to put it on the DVD and he didn't. Oh well, not important. The whole double-dip thing is really annoying.
If you don't feel like making your tortillas, a good way to make those rubbery ones a bit tastier is just to heat up the stove and run the tortillas right over the burner to crisp them a tiny bit, and add a little bit of a cooked flavor to them. Adds a little pizazz.
Actually, making the dough is really easy and rolling it out and cooking the tortillas is easy, too. I've noticed that, if you make them thin, they cook really well.
Rivercraig's version was still up at the time my account was deleted so I'm glad people could go to him. I would have left the video off but Rivercraig's version has bad sound.
No offense, River! :) I just wanted to put a good-sounding version back up.
Often, most doughs I try to do end up too wet, so I know how you feel. Just add more flour. I also find that it's easier for me to get a dough right when I use my hands to mix it. That way, I can always feel whether it's too dry or too wet early on.
Remind me do this one day!!!

RR also did a 10 minute school for some cookies, but that one is in the "Shorts" special features.
Most hardcore RR fans of his adult violent stuff don't watch his kid stuff. Someone should post that clip.

Unless they were all working on Sin City with treadmills they'd've got pretty fat but the end of it I reckon!
Great recipe... will make those tortillas for sure... puffy and nice, not like flat store ones... good to see!

You're supposed to add CREAM, not MILK to make the eggs fluffy, ask Gordon Ramsey.

You're right!! NEVER add milk to scrambled eggs, it does NOT make 'em denser, just separates over the heat & makes 'em runnier!

But the dough turned out kinda crappy.
prob, cus I used Baking Powder instead of Soda.
JoeNostalgiaILoveYou 3 years ago
baking powder IS baking soda... just with some acid added to it... and sometimes flour. but he did say to use baking powder.
evilgnius 3 years ago
I meant to say soda instead of powder.
so my tortillas werent as good without the acid.

took me like 4 hours the first time lol.
but now I can make them in maybe 15 minutes excluding the tortillas with one pan.

how were they? I always add ALOT of pepper to mine.
JoeNostalgiaILoveYou 3 years ago
they were good. i think there was some flavor missing though... maybe the pepper?... or maybe i should use lard?
evilgnius 3 years ago
Well I add ALOT of pepper. and when I forget the pepper, I get the feeling that alot of flavor is missing.
I never use lard because the uttering of the word just makes me feel sick so I wouldn't know if there was a difference

Haha, when I need a snack I do that, put butter on the tortilla, roll it up. It's good.
jenduh 4 years ago
Glad to have this back! I love making the pibil, my complaint about this recipe is it's basically just a recipe to make tortillas.
Then again, I still suck at making dough right in general.
Otherwise, this is a pretty standard yet tasty recipe!
