is it going 3000 on a certain car or many cars also it adds up so you dont have to get 3000ft in 1 launch?

3000 ft cumulative while holding onto any vehicle. So you can do it on many cars. It doesn't have to be in one launch.

Yes, you can reset or continue it in another environment and you won't lose the progress you've already done. I reset a lot while getting mine.
