Never pick up adult snapping turtles by the tail. The tail is part of their spine and it could seriously injure them. For very small turtles it is okay but bad practice to get into. Their jaws can only reach half way back on their shell so if you pick them up by the back half of the shell you'll be fine.

i have a fist size box turtle who has a mouth big enough to consume my finger, he never wants to let go but if you gently pull, he'll eventually open his mouth to try to get a better bite of ya which gives ya time to get out, and yes he's a pet box turtle but likes biting fingers for some odd reason, but i love him
