  • @MasterJonzo : Ingredients! Dhokla is made from Rice and a Daal and Khaman is made from Chick pea flour :)

  • thank u so much.im from mangalore living in dubai.my hubby likes dokla a lot.i tried so many methods but didnt succeed but i did perfect dokla and also easy one from this procedure.my hubby also liked the taste.i tried rava idli also.wonderful recipe too.

  • I am longing to try this recipe out but the raising agent "ENO FRUIT SALT" which you had mentioned in the recipe is not available here. Can i substitute with a combination of "CREAM OF TARTAR" and "BAKING SODA".

  • @lakshmipriyasridhar firstly eno is not a raising agent, It is an acidity regulator. you can use lime juice and baking soda, which is what eno has in it.

    The ENO we add already has some citric acid in it but you can add more if you like. Say hello to Hetal ;).

    These are instant dhokla so the ENO helps to make them light and fluffy. You can substitute baking powder and lime juice.

    ENO is basically 60% baking soda and 40% lime juice. Sorry, we meant to say "baking soda", not "baking powder in the previous comment.

    We have a video for khaman you can see. Some ppl make instant khaman with besan but the texture of the real ones is much better.

    You can use baking soda plus lemon/lime juice. Baking powder has other ingredients that may affect the texture of the dhokla.

  • Hello! I had made dhokla as i saw it here on your video. And i had also posted my comment on how well it turned out to be. The next time i made it i improvised a bit. I'd like to share it with all here. I cut tiny pieces of carrots into the batter and steamed the dhoklas. It turned out really well. Nutritious and tasty. I guess we can put in some herbs as well. Next time I want to try with mint leaves. And the next time with some crushed pepper. Just want to try it out. What do you think?

    That's great...we love to see people experimenting. We usually serve these dhokla with a coriander/mint chutney, but if you can definitely put in some mint leaves or crushed pepper. Basically, anything will work in terms of flavoring it.

    Unfortunately, we do not have a calorie/fat count. A good serving size is about 4 pieces (size as they are shown).

  • I was curious to know how to make dhokla after i ate it during a trip. Thanks a lot. I also have watched you making rava idli, which is more or less the same the only difference is that the rava has to be heated a bit. The rava idlis I make now are very good thanks to you.Thank you.   • we can also use the idli stand instead of dhokla stand....but just remember to put only a small amount of batter ....it makes nice roundels of dhoklas. :)

  • For this recipe and quantity, you can use baking Soda (1.25 tsp) pluse Lemon/Lime Juice (2 tsp) and omit the Eno Fruit Salt.

  • Hey I am gujrati but never knew the difference between sooji dokla and the regular khaman dhokla that needs fermentation can someone tell me the difference

  • Khaman and Dhokla are two different things though many people just say "khaman dhokla". Khaman is made from chana daal (chickpeas) and Dhokla is made from a mixture of rice and daal. Both have to be fermented. Sooji dhokla is an instant form of Dhokla and you can skip the fermentation part.

  • Eno is a combination of baking soda and citric acid. Since there is no fermentation required for this recipe, ENO helps the batter become light and frothy, producing light idlis.

  • Yes. U can make it as I do it in microwave. You ll find the recipe on youtube. The process is same , just instead of steaming put in microwave for 3 min or so.. It mite be nt that fluffy or may be. Try once :)

  • yep, eno is fruit salt that you would use to indigestion or acidity. It is also an agent to fluff and ferment your batter. :)

  • Ok! first of all you don't garnish your dhokala with celantro before you add vaghar. Also, it would be better if you cut dhokla before you add vaghar onit, so that it sips in to the gaps, and that makes it more flavorfull from all the sides.

  • Unfortunately no, they have to be steamed. There are microwave idly cookers available, but we have never used it to make this dhokla.

  • you can also use a bone china 'soup' plate, and place the plate in a normal fry pan... this is at least how i do, as in europe you can't find specialize steamer for indian foods..

  • hi..thanks for this recipe..i don't have this dhokla stand so i'm planning to make it in the pressure cooker.if i'm using a steel box do i need to cover the lid or let it open while making it inside the cooker?i just want 2 know which is the safe way to do it properly bcoz i can't wait to make it..sorry for bothering you!!

  • If you are using a pressure cooker, be sure you have something at the bottom of the cooker to rest the steel box on to hold it up out of the water. You don't have to cover the box.  Also, be sure to leave the whistle or weight off so that the steam can come out of the cooker. Good luck and let us know how the dhokla come out!

    The use of ENO makes the batter foamy which makes the dhokla rise without fermenting.
