for a choir, you are right. In this case, (organ) we have 5 voices polyphony. Of course, you can write for 4 or even 6 voices. That is the limit ,because our music wil lose the transparency. Somebody will comment: "What is with simphonic or big band orchestra? These formations have so many instruments...!"
