That song has some local South African words in it, Sawabona kujane, I think it's zulu. Pretty cool man! I am thinking of starting a bakery here in south africa. only problem is I have no idea how a bakery works. Do professional Bakers use all the same flours, yeasts etc that home bakers use or is it of a different quality? Man, try as I might, I cannot for the life of me get the same delicious soft elastic texture out of my home made bread as you get from a Bakers bread. What is the preservative used?

@Noofsmissus they probably use a wide variety of dough enhancing shizzle which most home cooks don't use. Look it up online, you should be able to buy some from a webshop.

Tried their bread when we were in the UK. Very good! But why do bakers always have too look so scruffy and daggy. It's enough to put you off a purchase when you see the staff out the back. These guys should get into that Kitchen Couture stuff for bakers from Australia.

I didn't know our UK bread was sour, just nice, better than this sweet nonsense and I have tried everything, only loaf that came close was a San Francisco sour dough - 6 out of ten.

@gorringeman The term sourdough is a bit misleading. Think tasty, crusty bread.

Give it a go, you won't regret it. Buy yourself a bag of bread flour and try to find someone who can start you off with a dollop of sourdough starter. You can make your own but takes about a week. You keep it in the fridge and feed it. Gives bread a great taste and acts as the raising agent. Failing that try one of King Arthur Flours recipes with instant yeast. Good luck geezer!

Well a) his hands have been scrubbed clean before he starts and b) you need to stick your thumb in the dough to get the shape of that particular bread bap. It is a recognized method and Chef and Bakers handle your food all the time as long as hygiene standards are followed it isn't a problem. And this bakery is immaculate with their hygiene and standards. If they weren't I wouldn't shop there.
