I lived in South Florida for a few years and it seems like almost every Cuban I met, their grandparents or great grandparents were from Spain, inparticularly the Canary Islands, or Galicia. But, Asturias and Andalucia to a lesser extent. There are White Americans that may have African blood in them, but like Cuba, most don't. Cuba was a very segregated place back in the day. Just like America.

White Latin Americans and Caribbeans on average tend to have higher/more levels of admixture than their white US counterparts. Perhaps the Cubans you met in South Florida that were white were newer arrivals to Cuba because those ones would have little to no admixture

Some of Cuban dishes are even identical or nearly similar to Canary Islands given connections between the two places.
