A few dealers don't like offers but most expect them and it becomes a negotiation. Many gun show dealers overprice by 10% or so because they know patrons will want to make offers no matter what. Go to a gun show with cash and you are in a better position than someone who has checks or plastic.

You're best off purchasing a Kimber, Springfield Armory or Para Ordnance 1911. You could get a couple of Llama 1911s for the same price and I'll bet a Para would outlast the both of them.

If you want over 90% blue and all matching numbers, good bore, etc. you would probably need over $1000. USD. Check "gunbroker" and "auctionarms" and see what they are selling for these days.
DAMN...I would move to the US just because of the gun laws...here in europe its so fucking annoying to have a permission for a handgun...automatic guns are restricted anyway.

if you want a 8mm mauser you can get a cheep yugoslavian one for 250$ if you want german k98 the is in mint your looking at 350$ to 400$ like grant new quality its about 600$
