The bottle breakes because of the vacuum at the lowest end of the bottle. The bottle gets knocked down and the water creates a vaccuum. When this vacuum closes the water hits the bottom of the bottle really hard and makes it break. Look at the Time Warp thingy.

when you hit the bottle it forms an air pocket

at the bottom of the bottle then the water fills that air pocket thus breaking the bottle
