This is epically nasty wow. You need to sear your meat longer. Also you slaughtered the mushrooms. Just pulse in a food processor for a few seconds not liquify. I also dont like the idea of a dusty fan anywhere near my preparation how unsanitary.

i commend you on your efforts man. Gordon has perfected this dish, and I wish people would at least look at your efforts.
Just some things i noticed though as to why the beef came out raw:
1.] The mushrooms were blended, not blitzed.
2.] The seal on the beef looked just a tad underdone
and 3.] The covering layer of puff pastry when you put it into the oven looked waaay thick.
As I said before, good work and I commend you on your effort on this very tricky dish.

2 big mistakes that spoiled it...
1. didn't chill in fridge so pastry was too soft, therefore...
2. when you scored the pastry you cut right through to the meat. That stops sufficient heat from building up inside, so doesn't cook properly
(3. also didn't dry out mushrooms enough so were too wet, causes more heat loss)

Dude - The pan wasnt hot enough to sear the meat to begin with. You fucked up at step three so it was never going to work. HOT PAN! and let the outside of the meat cook itself. Stop rolling it around, the less you touch it the better.
