  • thats not tenderloin or "fillet" as gordon ramsay says, thats a ribeye. tenderloin doesnt have that much fat in it nd is much better suited for this application. And did u use country ham instead of prosciutto ?

  • I'm cracking up, almost out of breath. The fan to chill was epic. But in fairness, Beef Wellington is THE most fucked up entree in Hell's Kitchen (the other being salmon, and IIRC it was scratched off the menu in Season 6). Appetizers, risotto and seared scallops are frequently screwed up.

    I wonder what would happen if Gordon watched your video, oh wait, someone covered that.

  • i commend you on your efforts man. Gordon has perfected this dish, and I wish people would at least look at your efforts.

    Just some things i noticed though as to why the beef came out raw:

    1.] The mushrooms were blended, not blitzed.

    2.] The seal on the beef looked just a tad underdone

    and 3.] The covering layer of puff pastry when you put it into the oven looked waaay thick.

    As I said before, good work and I commend you on your effort on this very tricky dish.

  • 2 big mistakes that spoiled it...

    1. didn't chill in fridge so pastry was too soft, therefore...

    2. when you scored the pastry you cut right through to the meat. That stops sufficient heat from building up inside, so doesn't cook properly

    (3. also didn't dry out mushrooms enough so were too wet, causes more heat loss)

Chop, season, and pulse..........and why is it too watery? what liquid did he or she add? It should be chopped finely as possible, not pureeing it. Bleh...... XP
