  • This is a good video, pan frying is a more better technique because iit make the fried chicken less absorbing the oil

  • Deep frying will always result in less oil absorption assuming optimal conditions in both techniques. The larger volume of oil is going to maintain heat better, and more complete surface contact create a barrier of water vapor from inside the chicken. The pressure differential keeps oil from soaking in.

  • @hihikatamari your post is an old one.. but I have to mention that your statement isn't a true one. Pan frying like being done in this video is no better for you then deep frying. And in actuality the oil absorption will end up being worse. In order to prevent oil from soaking into the coating a temp above 350 has to be maintained. Because a pan only has so much oil and such surface area.. its temp will drop substantially allowing for oil to better penetrate the coating.
