The whole soy sauce on a white rice bowl is considered bad etiquette because its considered to be a waste of soy sauce and an act of greed from what I have read.
The reason why the extra wasabi is considered disrespectful is because it's kind of like saying "you have cheap and old fish". The itamae knows the proper balance of wasabi he puts on the nigiri sushi. I actually like the places that do this compared to the ones who don't.
yeah the revolving sushi resturants are my favorite places to eat. but yeah we did not find out about the color coated pirce guide till after the meal. we ended up eating $42 USD in Sushi.

Thanks for the info, couple more things I was wondering about...
When you get the wooden chopsticks, is it rude or acceptable to briefly rub them together to get off the splinters?
When you are drinking your miso soup and come across large chunks or pieces that don't come out easily can you use chopsticks to get them or what?
I got the no tipping thing in Japan, but in USA tipping is still expected even at the most authentic Japanese resturant, right?

I think he means when you're not eating. Instead place the chopsticks next to the bowl not inside the bowl.

Lovely tips, now I know what to expect when eating in Japan. There's a lot to know, but I think that it's all relatively manageable.
