The most important thing to take from this video is that if you're just starting out, it's better in my opinion to start simple (such as with your portfolio sites). Not all designs should be simple as the two sites I point out. But if you're just getting started. It's best to keep it really simple while focusing on typography, proper spacing and overall organisation of the site. This will force you to spend more time focusing on the User Experience and not worrying so much on graphics initially.
If done right, simplicity can have the most power impact. While other times, being simple can = boring, repetitive, unthoughtful. Like Mike says, it needs to focus on the message. Do that and your site will most likely be fine :D
