What kind of seasoning you guys use? I get my crawfish fix at the Orleans Hotel here in Las Vegas and they serve 'em buffet style. When the place first opened up, they were unbelievably deliciously SPICY. Now, in the last two or three years, it's been toned down to having a rich, buttery flavor. It's still good but not the same as it first started out.
Everyone puts a little something different in the water, but most everyone down here uses Zatarain's, crawfish,shrimp, crab boil, seasoning. They also make it in a liquid concentrate. Really good stuff. I always use the seasoning made in Louisisana. The seasoning made in China is cheaper but I keep it real.

The name doesn't really matter as long as you boil enough for the whole party. Anyone from Louisiana will say Crawfish 1st, maybe Crawdads, you will never hear anyone from Louisiana say Crayfish. If you hear them say Crayfish, you'll know they're visiting.
