Yes, you can do your whole nail. You can use a 'striper' brush or a modified brush like I used in this particular video where I cut off most of the bristles so that only a few remained.
The brush used at the end to clean up the smile line is a simple flat nylon brush, like those used to apply uv gel.
to each his own. it all depends on how it's done, if the colours used are to your liking, etc.
I have a full client book of clients and do it on a weekly basis. Clients have been referred to me BECAUSE of the french marble and because they want it and love it.
