The OVM7690 camera supports up to 640x480 @ 30fps. The LRF Module used in the video currently grabs images at 2fps and has a 1Hz sample rate for range finding.

The Game Boy Printers haven't been made in over 20 years, but they're readily available for ~$5-$10 on eBay and retro gaming stores, though the thermal paper usually needs replacing (I picked up extra paper from buy.com SKU #216676387)
The Game Boy Printer accepts serial data at 8333 bits/second. For a 160x128 image @ 2bpp greyscale, the LRF needs to transfer 5120 bytes of image data, not including other packet information. So, each picture will take about 5 seconds to send after it's been processed by the Propeller (which takes another second or so).
