usually the center of the drum when tuned properly.

the sweet spot of a 12" tom is about 1 or 2 inches offcenter.

My floor tom is dead center along with my 12" tom so I guess it depends on Mic's and tuning also the the make of the wood.

Eric is a cool cat!!! I had the pleasure of hangin out with him back in the mid 80's and he taught me much of what I know about recording, songwriting, and life in general.
