I feel like this isn't much different from pre-heating or chilling any other serving dish. And as others have said, it probably won't take an hour for people to finish a platter of appetizers or deserts. (If it does, it means you either got everything out before your guests arrived, or you seriously messed up the recipe)

when they dip the thermometer they dip it into the plate and the plate is already hot so the food wont be that much hoter !!!
