nah I gotta admit i was busting to try Biscuits and gravy when I got to the states last year and I just wasnt fussed. We call biscuits scones in Australia and we have them with cream and strawberry jam! Or scone dough on top of a stew but the gravy thing I just dont get! But I had a go as we say! :O)

I understand, not for everybody. I enjoy very occasionally and I have to admit I enjoy most of what I prepared as opposed to some I have had in the states/ restaurants. So, may depend where you get it.
@pandmonium2k7 I remove the sausage with the slotted spoon allowing to drain the fat back into the pan. I know then how much fat I should make up or discard to get my 2 tbsp. Resting the sausage as the gravy is prep. will drain a bit more fat. The colour is the other reason. A more darker gravy will be evident when the sausage remains during the prep. of the gravy. A cleaner and leaner dish is my thoughts.
Ha! You hit us with the biscuits, so what better way to follow than the sausage gravy to drown them. I just did a batch a week or so ago. (Cheated and whipped up Bisquick biscuits, but I'm lazy that way...) It helps to keep the cholesterol properly elevated. LOL
I make sure I have these at least once when I visit the Southern US every year for South Tube YT gathering! I'm going to guess that 90% or more of the population here in my part of the world (northern Ontario) have never had this dish. yummmy!

If you do not mind, I am curious of your locale? North Bay, Sudbury, Timmins or way up there 'The Sault' or Thunder Bay. My guess is Timmins?
@angelwings500 Certainly is. It isn't a typical staple in these parts (unlikely to find it in a restaurant) so I prepare now and then. Anytime I'm in the states I always look for these comfort foods on the menu. cheers, KtC

@usra060 I try not to make it thick to begin with, just reducing the gravy until desired thickness. I find the error sometimes made is making it to thick at the start thus, more of a cakey gravy than smooth and rich. cheers! KtC

Just curious why you remove the sausage then put it back? I always leave it in there when I make mine. Does it get overcooked?
