Well he had to say it because nobody in manga seems to follow it! I mean DBZ makes death into an inconvenience at best. Naruto has undead zombies running around and Nagato's revival Jutsu. Bleach literally is about the dead and parting to the next life. Fairy Tail ha brought back a few people from "death" (Jellal and Zeref). One Piece had that weird Thriller Bark Arc that brought zombies in. All in all, nobody in manga seems to follow this and Shiro is the only main character that understands it

It's kind of annoying how people take this out of context. If anyone saw the Fate/stay night visual novel or the anime, they'd see Shiro is "killed" multiple times through the story (stabbed in the heart, almost slashed in half) but because of a magic item inside his body it regenerates his wounds to keep him from dying when he should have. In this part, he's trying to say that what he has is unnatural, and things should be the way nature intended: that people die when they're killed.
