That is because Disney chose to make their ship look like a ship from that era they said that in a documentrty somewhere and that style of ship persisted into the time in which disney first movie Steam Boat Willie was created so, i guess Disney wanted their ships to ressemble the cruise ships that were sailing when Disney was founded, and that is why i think the Disney ships looks like the Titanic
