  • Made this today with waxy-type potatoes--California whites. (Don't need hearty/starchy style in June.) Wow very nice! And easy. First time I ever used leeks for anything. Thanks for the inspiration.

  • Looks good but high-starch russet potatoes are floury not creamy. For creamy texture, low-starch white potatoes are the preferred choice I think.

    Though maybe you were going for thicker rather than creamy.

    Having said that all I have are russets so will give it a try thanks.

  • I like to add more veggies including Zucchini, carrot, vegetarian veg boullion cubes (2) some mushrooms, and parsley. I used baby new potatoes as well, and salt and pepper to taste! As a vegetarian, this is most satisfying.

    It turned out pretty good.

  • Yes, soup will last for a few days in the fridge. You can even freeze it.
