  • at least the eggs are "organic" (or rather biological)

  • Your voice so beautiful.... I have my Christmas cake ready, and icing will do well thanks to you. Such a sweet poet... :)

  • beautiful cake but you are BORING to listen too, much better on mute

  • @coconutbuNZ1 Well, I admire your honesty. Now fuck off! ;)

  • Thanks so much for this icing recipe and how to video. I found it last year and everyone commented on how nice the icing was. I have come back again this year to get the same recipe, thank God I found you again.

    Many many thanks from Melanie

  • @Melanie123d Thanks Melamie! Your comment has also reminded me that I still need to ice this years cake which has been maturing since I made it last year, so it should be wonderful - it certainly smells good! I always set out to ice the damn thing in the middle of December and as usual, procrastinate until the very last minute ie Christmas Eve! Anyway, hope your cake turns out as you hope and have a Merry Christmas!

  • A work of art, I'm going to be icing up my first Christmas cake this week. True what you were saying about tastes changing, I used to hate the stuff

  • @AnarchistsAnnonymous Well thank you. You know, no matter what it looks like, I guess it's the taste that matters. Have a wonderful time whatever you do!

  • w3ay too much marmalade

  • @richard1967uk Not if you like a lot of marmalade! ;)

  • Lovin' it! Ta!!!!

  • it doesent seal as well

  • a wee tip mate your cake should be baked on the bottom rack of a hot oven "you wont get the blackish edges that are not as moist as the inside " and your icing mix is wrong am a baker to trade and good royal icing is paramount ,,when your spreading marmalade on put it on your cake using a pallet knife and have a jug of water beside you that you can wet the blade so spreading is easy and roll the marzapan out then cover the cake and cut at the bottom not the other way around

  • ab0ut icing thats fl0ur 0r sugar p0wder?

  • i hope u don't mind me asking u but i am making my mom's cake this year have you got your way how to do a Santa if u do all some think along them line's that would be great Brad xx

  • Thank you Brad Thunder for the inspiration! Enjoyed watching and the banter along the way!

  • Thank you! I wasn't home for Christmas last year, but will be this year. The cake has been baked and is maturing nicely. Just re-saturated it in brandy today...

  • Thanks for sharing, looks lovely..I just finished mine off today, but with royal icing, glad your's isn't smooth like ice too!!! lol

  • I have this years all baked and ready. I come off early for Christmas this year, so will ice it a little bit before Christmas Eve, like I did with ths one!

  • can you use the icing for cookies? i mean does it harden, like really harden?

  • (Sorry for the delay) It does tend to go rock-solid after a while, but a few drops of glycerine I think, keeps it soft!

  • thank you, i acctually want it rock solid :) btw, loved the poem :)

  • Don't hang your head in shame! I do have a recipe, if you do not. Very easy! Once upon a time when I was a pastry chef student,if you would like to try..1 lb almond paste (500g); (if you would like to know how to make that, I can share that as well)3 oz glucose or corn syrup(90g), 1 lb(500g) confection sugar sifted-In steel bowl blend almond paste and glucose until smooth (best to use mixer)Add sifted sugar, little at a time, stop adding when consistency desired is reached. Add color if desired.

  • I'm going to give this a try this year! Might even make a vid as well!

  • BradThunder, do you make your own marzipan or do you purchase pre-made?

  • (hangs head in shame) premade, I'm afraid. Would love to have a go at making it though..! :)

  • nice vide0 that looks so yummie

  • Hi what is the recepie for the royal icing?

  • Hi there! For that size of cake, (8-9") you need 2lb icing sugar, the whites of 4 eggs, 2 tsp Lemon Juice and if you want, 2 tsp of glycerine to keep the icing soft. I don't bother, because I prefer it harder. Enjoy! :)

  • hey mr chef, can u lend me your frosting ingredients? please...

  • what was that thing that you spread on the marzipan before putting it on the cake?

  • apercoite jam i think...........

  • Correctemundo! Apricot jam it was! :)

  • that was a nice job u did on that cake mate. :-)

  • Gorgeous Gary. Have you ever thought of taking on the ladies of the WRI in the cake baking comps?

  • okay, i never get this! why are you (other ppl too) putting dough (looks like it) on a cake? SOMEONE PLEASE TELL ME!!!

  • It's actually marzipan (or almond paste, I think it's also known as). The combination of that, the sweet icing and the cake itself makes for one helluva mouthfull!

  • oh my.. now I'm craving cake! :)

  • I love the end bit =]

  • Ooh, marzipan. When I was a kid, I just thought that was extremely thick icing. Will there be more cooking vidoes?

  • If you guys want more, then there'll be more! I aim to please! :)

  • My gosh, it's gorgeous :-) You had me until the marzipan though... I'll just keep looking at it!!! Well done, and I liked your poem too.

  • Not bad, my fellow cake decorator!!!

  • I'm a 'once a year' man in that respect!

  • Excellent looking cake. "The birds are in the treetops dozin' And the dog doo on the lawn is frozen" Does that help?

  • What a beautiful cake! Very impressive!!! :-)

  • swEEt!

  • So that's put the Icing on the cake. I always want to have my cake and eat it too. But that never, ever happens.

  • You need to bake one first mate! ;)
