Your comment has also reminded me that I still need to ice this years cake which has been maturing since I made it last year, so it should be wonderful - it certainly smells good! I always set out to ice the damn thing in the middle of December and as usual, procrastinate until the very last minute ie Christmas Eve! a wee tip mate your cake should be baked on the bottom rack of a hot oven "you wont get the blackish edges that are not as moist as the inside " and your icing mix is wrong am a baker to trade and good royal icing is paramount ,,when your spreading marmalade on put it on your cake using a pallet knife and have a jug of water beside you that you can wet the blade so spreading is easy and roll the marzapan out then cover the cake and cut at the bottom not the other way around

Once upon a time when I was a pastry chef student,if you would like to try..1 lb almond paste (500g); (if you would like to know how to make that, I can share that as well)3 oz glucose or corn syrup(90g), 1 lb(500g) confection sugar sifted-In steel bowl blend almond paste and glucose until smooth (best to use mixer)Add sifted sugar, little at a time,stop adding when consistency desired is reached. Add color if desired.
Hi there! For that size of cake, (8-9") you need 2lb icing sugar, the whites of 4 eggs, 2 tsp Lemon Juice and if you want, 2 tsp of glycerine to keep the icing soft. I don't bother, because I prefer it harder. Enjoy! :)
It's actually marzipan (or almond paste, I think it's also known as). The combination of that, the sweet icing and the cake itself makes for one helluva mouthfull!
at least the eggs are "organic" (or rather biological)

(Sorry for the delay) It does tend to go rock-solid after a while, but a few drops of glycerine I think, keeps it soft!
