Hello, I was going to make mochi for my class for part of my I-Search project. I looked at you video on how to make it, but are there other things you could put inside?
The mochi I made isn't firm enough just like the video.I followed the measurement but I used powdered(not the coarse type) Glutinous rice flour,was it because of that?
the problem isn't making it but finding the ingredients.. I guess I'll have to go to Amsterdam to see if they have some Japanese stores there haha, since we don't have it in our little city..
for the red beans for the anko I have to go specially to "Amazing Oriental" a dutch asian supermarket.. Damn that's a whole lot of trouble to go through for a recipe.. And I live in a little farmerstown so I need to take the train.. why don't people share my fascination for Japan here! :(

1.) The dish towel wrap on the steamer lid absorbs precipitation, protecting the mochi below. Without the towel, the steam rises, hits the lid, then turns into a LOT of water that falls back onto the mochi below-- ruining its texture. (LOL, can you tell I've made this mistake before?) 2.) The Chef's exact procedure for dividing the Anko is her way of "guess-timating" proper dosage per strawberry.
@xkzonstr: An old white cotton shirt might be OK, especially if it's thick, and can be wrapped around the lid twice. Try testing it. Set up your steamer as if you were about to steam some mochi. Wrap the shirt around the lid, then place an empty bowl in the steamer. Let the water simmer for 15-20 minutes, then lift the lid and examine both the shirt and the bowl. If the shirt looks like it can take in more water, and there isn't too much water in the bowl below, your shirt will do.
@TachieBillano Took your advice, and the t-shirt worked perfectly! The Daifuku came out extraordinary and it's so good! I made two batches, and I forgot that I had to sprinkle katakuri starch on the Mochi dough before shaping.. I ended up fighting the first batch haha. But thank you so much for answering my questions (promptly for that matter too).

@Zantillia You can order anko from Amazon or Mitsuwa net shop.
Katakuriko is potato starch. If it's hard to find it, corn starch would be OK.

@TachieBillano Thanks! Would a white t-shirt suffice to wrap the lid with? That may be a bit too thin to wrap the lid though..
