Stripping UF cable is always a PITA. If you're lucky, you can grab the ground wire with a pair of lineman's pliers and use it as a 'ripcord'. When that fails, I slide my knife lengthwise along the ground wire at a shallow angle. Too steep, and it will dig into the wire. Easier with something heavy like a jack knife, rather than a razor knife. Looks like you'll be getting plenty of practice!... ;o)

uf- direct burial cable- not worth the aggravation to use inside- dont even use outside- pipe and wire is a better instalation

@patwregan How well I know abiut that UF wire! It's about like trying to strip 6 or 8 gauge wire in the winter!

People can get away with one outlet easy they just put those plug in things that turn 2 outlets into like 6 and so on.
