He's so right... I've tried to cook homefries without boiling them first and it just doesn't work - it takes at least an hour to cook through, and by then the outside is all leathery. A very good, basic recipe for homefries!
Im sorry but I dont agree with anything that you do to make homefries. Me and my husband both like my home fries better. I think cooking them before makes them more like mashed potatoes. They cant take the flipping.

Instead of pre-boiling them can you microwave for maybe 5 minutes?

Yes, I microwave my potatoes instead of boiling them for homefries, and it works quite well.

i made some today, i make em different. Cut the sides so they are flat. Cut them in julienne strips or watever. Then cut them into cubes.
