Great video Steve, plates have been a bit of a challenge for me, due to the rims flopping over, but you make it look easy. I'm presuming you're using a groggy clay, does that help with warping & strength?
I think if you don't let the rim get too wide and keep it slightly above horizontal you will be surprised how easy it is .I do think its the thickness of the rim or I should say the lack of thickness that can make it fall. The clay is grogged but I have used red earthenware before and it was OK. I do think that if you stick to the principals of not too thin keep it above horizontal and supporting it with a sponge you should be OK.
