because when you are shifting, there are no torque (ie force) applied to the drivertrain which means during the time the clutch is engaged, car is not accelerating.

Technically it is: acceleration is any change in velocity i.e. change in direction speed (slowing or speeding up). But yes since the clutch basically stops the flow of power to the wheels, the car is coasting, not speeding, (accelerating as you said), up.
