I always wanted that to happen as well.

But I actually read on wookipedia that before she was taken to Jabba's palace, she met Luke, and he offered to take her away so she wouldn't have to live with Jabba. But Bib Fortuna had filled her head with delusions of living in luxury with Jabba, so she rejected Luke's offer.

So actually, Luke was able to help her, but she didn't want help - just not at the time. Poor thing, so naive.
