  • Hi there! I am going to bake these tonight. I am wondering what would you have to do if they're frozen. ? Microvave before you put it in the over? or just put it in the oven like frozen

  • @ilovemakeupgal1998 If you want to bake them, cut them into strips and boil them for a little while, so that they will be partially cooked. (You may start from frozen strips.) Then drain and dry them off, place on a pan with nonstick aluminum foil, spray with cooking oil spray, and you may salt at this point, it you like. Bake about 10-15 minutes, until they are the consistency you like--much healthier, and just as good.

  • Looks delicious! I'm surprised at how crunchy they seem to be. It's hard to get sweet potato fries to come out crunchy. I have a little dipping sauce idea for ya that I use for my sweet potato fries. It requires mixing together mayo, a generous amount of curry powder (until it's deep yellow), some garlic salt, a little celery salt, and some black pepper (adjust everything to your taste)--REALLY good with these ;)

  • would not double-frying make them a little crispier? Normal fries need to be put into fat twice to avoid soggy fries!

  • I deep fry sweet potatoes that are good for eyes & heart. They're pretty good. But what I forgot was adding sugar & salt

    I want to try this recipie what do we add in if we use a unsweetened potato.

  • This seems to solve some of the problem I had- which is the soggy fry problem. Thanks Betty. They need more room so that the oil can do it's work. I think the only problem might be volume cooking. Like you need to let the first batch sit, so for potentially a bunch of people this might be hard because you either you have to serve only some people at a time, or let the first ones sit while several batches are piled on top. Not sure if that is optimum for taste

  • @sandrinekows They will just be naturally crispy, if you fry them at a high heat (about 350 degrees). Frying them at less heat will make them soggy.

  • Thanks for the video. Is Peanut Oil the preferred oil for deep frying sweet potatoes? I tried this with olive oil and the oil began to smoke rather quickly.

  • @Cappadoccia04 Peanut oil has a high smoking point, so that's the difference. I always use peanut oil for frying and olive oil for sauteing.

  • @bettyskitchen Thanks for replying! I tried this with the peanut oil and it came out perfectly. They took about 2-3 minutes to cook. I did not add sugar however, I just kept the salt. Do you have video showing how to bake them instead of deep frying?

  • Betty, over the past year or so I have been using sweet potatoes right along with white potatoes to change things up a bit. Fried potatoes, sliced or cubed, both get used. Oven/french fried- both kinds. My whole family has enjoyed the addition and I can't understand why I didn't do this before. The added sweet potato makes anything taste better. I don't add anything sugary to them either while they cook or when they're done; only S&P. They're sweet enough as is, we think. Thanks

  • To make them softer in the middle, you can try putting the sliced up potato covered in water--not too much water, just enough to cover all the slices--in the microwave (in a microwave safe pot--nothing metal; ceramic or glass would be best) and set to 5 minutes. Then take them out (it'll be hot), thoroughly dry with paper towel, and deep fry for a couple of minutes, or glaze with oil and put them in the oven.

  • Hi Betty, I know this sounds redundant, but these look so yummy!!

  • The absolutely best way to do this is to: bake them first (just little undercooked) then fry them about half of the time you would normally, then take them to cool and when they are cooled off you fry them again!

    Absolutely perfect restaurant like crispy fries <3

    Adding the steps really makes a huge diffrence!

  • @51jenjen You can test the oil as it gets hotter by putting single pieces of sweet potato in. If they don't sizzle much, wait a bit and try again. They should sizzle nicely, and if they seem to be getting too hot, turn the heat down. Just keep a watchful eye over them.

  • Those look really good, Betty! :) Another thing you can do, (well we do anyway) is to cut the sweet potato into thin-ish circles, add seasoning and then shallow fry in a cast iron skillet. They go really lovely and crunchy and we normally serve them with sour cream. :)

  • @ALLINKNOTS Cinnamon goes well with sweet potatoes. I think you would like it sprinkled with the sugar on top.

  • @amenoacid09 If they cook slowly, they will be soft. I found mine to be crunchy on the outside, but soft inside--not much different from regular French fries. You might cook them over a little bit higher heat, or make them "shoestring" style (very slim).

    I've seen these in the supermarket, never knowing what to do with 'em..

    Here in Germany we don't have any recipes with sweet potatoes...
