The first cathegory is subjective:"en"(one moose=en älg(animals, personal things(?))

The second of how to say one is objective: "ett"(one house=ett hus)

I think I know what you mean. the pronounciation of seven can actually be pronounced in two different ways.

Most of us say it like Johan did in this video. That "shroo"-sound was more common many years ago... I think. but of course, its different depending on where in Sweden you are.
