Tip: You mix the shot with cold milk BEFORE grinding the ice and the ice cream otherwise the ice would melt from the high temperature.
That's why the shake was so watery at the end. If you want to make it chunky again you can always put more ice, but by then the shake has already been diluted too much.
Strange... it should make a difference. Your espresso machine should pump out hot water that's upto 140 degrees. It's going to have an effect one way or the other.
If that doesn't change the consistency of your shake, then I suggest you check the settings on your espresso machine.
sometimes the milkshake is too thick from too much ice cream so i purposedly add the hot espresso afterwards.. and in the video i think he added too much ice...hense very liquidy. but that's how they make milkshakes like that in korea. with lots of ice. they are not used to thick milkshakes like we get here at mcdonalds or wendy's

it was runny at the end because the ice cream was not cold enough when he added it. Doesn't matter when you add the espresso..
