I wait around a week before I bottle it. A little longer in the winter. Then I wait 3-4 weeks before I drink any. It's like wine...it gets better with time. But it should be drank within a year.
It it's stronger than you like trying making it with dextrose instead of dry malt extract. It's good either way, but I prefer it with dme.

The homebrew is going good, I have been trying to let it sit a while in the bottles but I have drank 10 or so already. It has more flavor than I am used too. I might back off the malt some and split it with corn sugar.
When you brew a batch how long do you let it ferment?
I let it ferment 6-7 days I think and bottled it, maybe I should have waited longer.
It is a lot of fun and I am about to start my next batch so I don't run out.
